Downtown Gables indie takes on the Mexican fast-food chains.. The neon-flamed sign at the entrance reads "Making Tortillas Now" in an ode to freshness reminiscent of Krispy Kreme's "hot doughnuts" beacon. Chipotle, Qdoba and Baja Fresh aren't too far away, so this stand-alone quick-service concept needs to stand out through variety (the salsa bar has a dozen varieties available) and healthier fare (the tortilla chips are baked, not fried). The menu also goes beyond burrito rolling to include shrimp skewers, barbecue pork and authentic Mexican candies. The dining room is well-lit and jovial, with small wooden tables and chairs wrapped in paper mache of Mexican newspapers.
