High-end Italian cuisine washes ashore at the new and improved Fontainebleau..
In a hotel makeover that has been praised for its throwback charm, one of the highlights is the surprisingly modern Italian eatery inside. You won't find hokey red-and-white checkerboard tablecloths here, but instead a classy dining room garnished with marble, brass and leather. NYC's rising star Scott Conant starts guests off with homemade focaccia bread as they ponder a menu loaded with updated Italian classics like spaghetti, polenta and braised short ribs.
